Hike, Cook, Eat, And Explore….Just A Few Of My Favorite Things

I don’t get a whole lot of down time with being a wife, mother, childcare provider, and a person that will not pass up a day outside if the sun is shining. However, there have been a few things consuming what little free time I do have.

Trip planning…..I should have been a travel agent. Although, do people even use travel agents any more???? Who knows. Anyhow, I have been working hard at planning our next adventure vacation and I am finally at a place where I can say it’s complete. I till have two places to book for the night but for the adventure part of the trip, it’s complete. Sleeping is just details anyhow…right? This vacation is going to be like no other since I am not ready to live the airline HELL again any time soon, so we are driving this one, exploring many places, and of course hiking to some of the places on my bucket list.

Cooking….again something I have been enjoying but I know will soon become a chore for the next few months with the warmer weather. There is nothing worse than having to come in from outside to cook…uggg. Why do we need to eat in the summer time….its such a waste of good summer time hours? Anyhow, I splurged and bought a spiralizer and have been experimenting with it. My husband is a bit scared of what I may put on the dinner table in the next few weeks and our son has already said to give him notice and he will go out for dinner. Party pooper!!!

And I have been roasting veggie mixtures like crazy and found that I LOVE roasted lemon slices on my veggies. Lemons turn to sweet slices of heaven when they are roasted. You have to try it!!!

We are planning frantically for camping season and I could not be more excited. OK, well maybe if it were paddling season but that is still a ways away for me. Waters are still a bit chilly so why not camp instead. I placed and received my yearly order of grab and go camp meals for when the urge hits and we have no time to prepare…we just grab and go.

I have to mention my new love…..sushi. I have had sushi in the past at a few places but this months dinner out with my brother was for sushi at an actual sushi restaurant here in Green Bay. I was nervous,excited, and a little scared to be honest. They often will serve fish eggs on many items and being married to a avid fisherman, I cannot eat fish eggs from any species. However, we easily worked around this dislike and I was amazed at how wonderful our meal tasted, looked, and I cannot wait to return. We had the chef prepare everything we ordered on one plate to share between the three of us and it was like a party in our mouth, literally!!! Look at this plate of food. I am loving these monthly dinners with my brother, he is an adventurous soul and a great foodie at that. And, I will never again have to try and figure out where to go for my future birthday dinners….without a doubt it will be out for sushi.

Ugga Mugga…..Another Long Week On My Own

This week was much like last week in that I was again, on my own all week. Hubby and I said goodbye to each other again Monday afternoon so he could catch his flight and I could face the week ahead on my own. Thankfully this does not happen too often with his job, but when it does it really rocks our world here at home. We rarely do anything apart, he is usually always home at the same time everyday and all my daycare children know when this time is, and honestly, it just makes life a bit crazy trying to work around when we can find the time to chat in between busy schedules. Add in a time difference (if any) depending on where he is compared to me here at home and it can get a little difficult…. I always pray I am the earlier time so I can go to bed at a normal hour.

Anyhow, like last week, I did what I wanted when I wanted to do it. Here is the outcome of my workouts this week:

Sunday: 1.5 mile walk

Monday: 3 mile walk together before dropping him at the airport, 30 minutes elliptical at the gym

Tuesday: gym:30 minutes elliptical and stretching

Wednesday:home: floor weight routine and 30 minute recumbent bike

Thursday: gym: 30 minute elliptical, upper body weights, and stretching

Friday: rest

Saturday: rest…but a ton of big household chores…..scrub carpets, do loads and loads of laundry, and just hang out with my hubby who arrived home finally.

Meals were easy peasy since, for the most part, it was just me.  It sure makes grocery shopping much easier when its less mouths to feed. Here’s a peak at the meals from the week.

Sunday: baked ham, roasted brussel sprouts, scalloped potatoes(family dinner)

Monday: philly cheese steak brat, sauteed perogies with spinach and bacon.

Tuesday: chicken and cheese quesadilla with stuffed poblano peppers(dinner with our son home)

Wednesday: sushi

The week as a whole….I would say was pretty good. I love being back at the gym. Renovations there are almost complete and I am pretty excited to hear we will be getting kettle bells soon. I love kettle bells and wish I had more at home, so this is something I am really looking forward to having access to at the gym.

Life lately has been many unanswered questions…however, the one thing I am sure of is that winter is getting closer to making an arrival and I am preparing myself the best way I know how….I have a whole tub of hot chocolate, my Christmas list has an electric heated blanket on it, and I have stocked up on lip moisturizer….I literally have tubes of this stuff everywhere! The joys of frigid temperatures makes me want to cringe!!!!!

 

 

 

Back To Normal Life Once Again

Well, this week meant it was time to return to normal life again. Which meant back to work, errands, appointments, cooking and a little fun thrown in here and there. If only we could stay on vacation forever…..but then I believe it’s called retirement….right? And I am not even nearly close to that yet!

One thing I did not miss this week were those steps we had been training on for weeks prior to this trip.

Yes, they made my legs feel so strong but they also took away my gym time which I love. The gym is my place to go for mental health treatment….a good workout is great for the mind. As of next week, by the time I get done working and dinner is over it will be dark, which means we plan to return to the gym on a normal basis.

Sunday I came down with what I call “plane plague”….you know…the every time you fly you get sick kinda thing. Which really put a bit of a kabosh to any big workouts because my head, throat, body….well let’s just say everything hurt.

So here is what I did manage for workouts this week:

Sunday: 4 mile hike with my son on an area trail

Monday: floor weights/stretching, 3 mile walk with all the ghosts and goblins in our area

Tuesday: 30 minutes on the recumbent bike, and weight lifting

Wednesday: 30 minute recumbent bike, floor workout, 3 mile walk

As for meals this week…..I made a big batch of veggie soup and a big batch of slow cooker beef stew. This way we could eat a meal off both and freeze the remainder for quick, grab and go meals for lunches since our freezer meals were running a bit low.

And to top off the week, I was treated to an awesome dinner of hibachi/sushi with my brother. WOW, was it fantastic!!!!

What a fabulous weekend we had. The sun was shining and the temps were comfortable enough to have fun outside with little more than a light jacket on. Thankfully, we had a weekend full of outdoor plans to fill the daylight hours.

Reading: Thru Hiking Will Break Your Heart by Carrot Quinn

Enjoying: All the time I am spending on my standup paddle board while my husband does water therapy in nearby lakes and the bay of Green Bay.

Missing: Morning walks with a friend of mine. She is a crossing guard so during the school year we walk every morning. Since school is out for summer break we have only walked a few times and I miss this social time.

Eating: Spicy everything….I was never a spicy foods lover until about a year ago. I am not quite sure why my tastes are changing but I am enjoying it.

Struggling With: Our recent lifestyle. Ever since my husband was put on weight restriction with his back/nerve injury we have not gotten to do many things that we love to do. No disc golf, no whitewater kayaking, no tennis, no nothing and it’s driving both of us crazy.

Making Me Smile: I walked into the gym this past weekend and noticed two new stair master machines. I was standing next to one when my husband walked out of the locker room with a look of Christmas on my face and he rolled his eyes at me. How could I not give this a try? It was calling my name the second I saw it. Super awesome!!!!

Anticipating: Our upcoming vacation. I have no idea what or if we will achieve everything on the list that we had hoped to do thanks to these medical issues. I just really want a safe, enjoyable trip as a family.

I hope you enjoyed looking back with me through our June events. I have high hope that July brings better health to my husband and that we can get back to the life we are used to living. We miss paddling our rivers with our whitewater kayaks more than you could all imagine. That being said, I sure am not minding the extra time I have been getting on my standup paddle board while he does water therapy for his back pain. Who needs a pool when you live near so many lakes…..water therapy can be done anywhere and that is exactly what we have been doing.

My Top 10 Summer Essentials

Let’s talk about summer and some of the things I could never do without during these few months. Here in WI summer really only last about 3 months, sometimes a little more or less but for the most part 3 solid months. For me, I take advantage of every second. During these three months I have consolidated a list of my top 10 summer essentials. Let’s see how your summer essentials compare to mine.

#1 Sunscreen: I have finally found a favorite and I am sticking to it. It smells nice, actually does what sunscreen is suppose to do which is protect from sunburn, and does not feel like you are applying Elmer’s school glue to your body.

#2 Fresh Veggies: From farmers markets, to road side veggie stands, to just stepping out in the backyard to pick our own, I cannot get enough fresh veggies.

#3 Outdoor Exercise: Why anyone would go to a gym during the summer months to workout is beyond me. Use your imagination and get in a good sweat outside doing something fun.

#4 Ice Cream: This is my favorite summer time treat. I would never turn down the offer to go out for ice cream.

#5 Greecie Girl Headbands: Love, love, love these headbands. I wear these all year but would never exercise without them in the summer for sure. They stay where I put them, never slip, and can hold up to every activity I do. I have worn them on the river, trail, and at the gym. #6 Vitalyte: We are an active family and replacement fluids are a big part of our summer. We go through gallons or Gatorade and Vitalyte.

#7 Nalgene Cozy: Nothing drives me crazier than a sweaty water bottle that leaves puddles everywhere I set it down. Since I take my Nalgene water bottle everywhere with me I splurged on a Nalgene cozy with no regrets.

#8 Clotheslines: Nothing says summer like fresh hung laundry and bedding.

#9 Cool Summer Salads and Sushi: The last thing I want to do after spending the day outside is come in and prepare a hot dinner. So summer salads and sushi is rotated quite often on our weekly menu.
