Cranberry Coconut Overnight Oats

For this weeks overnight oatmeal flavor we have a nice taste of the tropics.This creamy tropical tasting combination was a big hit with my daycare children and myself.


Cranberry Coconut Overnight Oats

1/2 cup old fashioned oats(not quick cooking)

1 TBSP shredded coconut(unsweetened)

1 TBSP craisins

dash of cinnamon

1 tsp. ground flax seed

3/4 cup almond/coconut original blended milk(Almond Breeze Brand)

For this one I did not add any additional sweetener because the milk blend is sweet already. I also think slivered almonds or walnuts sprinkled on top would be tasty on this conbination. I did not do this for us but feel free.(I have a nut allergy)

Mix your dry ingredients all together and put them into your jars. Add the milk blend, shake and refrigerate overnight. In the morning heat the mixture for 1-2 minutes and enjoy.

Peanut Butter Banana Overnight Oats

Do you know what one of the worse things about living in Wisconsin is for me? When the alarm goes off in the morning in the winter months. You are nice and warm laying in bed and know the second you drag yourself out from under the covers your going to start shivering. Yes, I immediately put on my robe and big furry slippers, make my way to the hall and turn up the thermostat.

Next is breakfast, which I am in charge of 5 days a week. Which got me to thinking, couldn’t I make up oatmeal the night before and leave it sit in the frig? Then when I get up, I could just grab a premade jar, warm it up and breakfast is served. Fantastic, a hot breakfast in 2 minutes.

Time to go into my lab (kitchen) and see what I can come up with for flavored oatmeal creations we would like. After some samplings, I picked out 5 of our favorites so far to share with you. I will be sharing one recipe for overnight oatmeal with you a week for the next few weeks.

Before I share the first recipe with you though, we should talk about some possible combinations you could try on your own. Nuts, cocoa, dried fruit, spices, a variety of milks, peanut butter, canned pumpkin, sweeteners such as honey, maple syrup, agave, brown rice syrup are all possible additions to your own mixtures. So don’t be afraid to try new things and see what you come up with. If you make a tasty one, please share it with me also.

Here is the first one:


Peanut Butter/Banana Overnight Oats

1/2 cup old fashioned oats(not quick cooking)

sprinkle of cinnamon

1 tsp. ground flax seed

1 TBSP. brown rice syrup

1 TBSP. natural peanut butter

3/4 cup vanilla almond milk(unsweetened)

fresh banana(DO NOT ADD TO THE JAR)

Mix your dry ingredients in a small bowl, and pour this into a jar. Add your sweetener, peanut butter and almond milk. Cover tightly and shake until combined well. Refrigerate overnight. When you are ready to enjoy, take it out, microwave for 1-2 minutes. Slice your bananas on top and enjoy.

 There you have it, a hot breakfast, easily prepared and much less costly than the pre made packets you find in the store that contain mostly sugar.
