When That Solid Plan Falls Apart

Going into this week I had a pretty solid plan. However, by mid morning Monday that plan had drastically changed in more ways than one. Which ultimately meant it was going to be a wild ride….especially since I was solo this week with the hubby traveling for work. Although, looking back at the week, I still did pretty good in the meal area so it was not a total failure.

Here is what we (my son and I) enjoyed this week:

Saturday: BBQ pulled pork, homemade coleslaw, and parmesan potatoes

Sunday: Vietnamese vermicelli bowls

Monday: chicken breakfast sausage(recipe here), eggs, and cheese on biscuits

Tuesday: lentil veggie chowder (recipe here)

Wednesday: I went out with my brother for our monthly dinner together

Thursday: one pot ham and parmesan pasta casserole with broccoli and spinach

Friday: My son offered to prepare dinner tonight since it would just be us and I had had a long, hard day of emotional family stuff. He made an egg skillet with peppers, onions, and andouille sausage and served it with jalepeno cheese bread. YUM!!!

Not terrible right? Could have been better but really could have been worse also. From freezing cold mornings once again which made my morning gym sessions too cold, to a death in the family which then resulted in an unexpected day off of work, to a fall on the ice…ouch, and a disaster in airports due to a major snowstorm which brought my husband home at 2 a.m. instead of the original 4 p.m.. I, for one, am so darn happy to bid this week goodbye!

As for the next week, it was a tough call. I hate throwing out food but not knowing if my husband would be traveling once again for work or not left me two menu plans. One for two people and one for four people(one serving being a lunch box serving of leftovers) which in turn made grocery shopping a free for all. So I was sort of flying by the seat of my pants not knowing exactly how much to buy or not buy. I was trying to plan for not to much veggie waste if he would be gone but also to have enough if it was cancelled and he would be staying home. What’s worse than having to grocery shop twice in one week when you don’t have enough or forgot something right? So here is what I came up with for food prep for the week.

I cooked up some cinnamon apples for my daycare child and my husband(if home) to enjoy. IMG_0378

I made some carrot coconut muffins for breakfast for everyone to enjoy. I also pre cut all veggies for the week and also threw together a quick batch of mexican quinoa for myself to have for lunch all week.

Recent Favorite Finds

I am pretty excited and happy to share some of my favorite finds with you all today. I am not a big internet buff so I typically find my favorites in grocery stores and on trails…that of which I have not been able to enjoy much of yet this year. So if your into food and fun read on.

A few weeks ago I bought a jar of these and had to go back for three more jars to last me awhile. They are so fantastic and I love them as an afternoon snack.

As I plan for our upcoming camping trip I happily came across a new to us dehydrated meal that I am excited to try. We have learned the hard way never to buy a different brand than what we like when that will be the only food source we have available while hiking. This however, will be an addition to a regular campsite meal so no one will be going hungry if it turns out to be horrible.

We watch a lot of cooking shows on television and many use creole seasoning in their dishes. I have been dying to try this and finally found one in our local grocery store. I LOVE it. It is now my go to seasoning for anything that needs a bit of a kick.

Have you  ever tried scrambling eggs in a Blender Bottle? We did and it was genius. So easy, fast, and simple. This would be awesome at a campsite….less mess:-)

Applesauce is one of the dullest fruits in my opinion. Recently, when I was at a bed and breakfast we were served applesauce with a bit of fruit on top and now I add some fruit at home and my kids eat this up without any hesitation. They enjoy it more and so do I.

One pot meals call to me in my sleep sometimes. OK, maybe not exactly, but when I dream of doing dishes it’s time to concentrate on making more one pot meals. And that is exactly what I have been concentrating on for family meals. This one was outstanding with pasta, shrimp, and veggies all cooked in one pot. Add the cheese at the end, stir, and serve. Now is that easy or is that easy?

Remember those pancakes we tried to see if my stomach could handle keeping these down unlike all the other pancakes we have tried in the past? Well, I have good and bad news to share. First, the good news….they are probably the best pancakes I have ever tasted. Bad news, they still made me ill. (Do you want to know why…read here)
