What I Am Loving Lately

Ahhh, it’s Friday and here are a few things I have been loving lately.

Workouts: I have had a whole week of my routine workouts back. I missed exercise so much being injured.


New insoles: I think I am finally starting to get used to my new insoles. Those golf balls(arches) I felt like I was walking on seem to be getting smaller.


Butter flavored olive oil: I am in love with this flavored olive oil. Sauteed with fresh veggies is the best ever!


First kayaking trip of the year: We have our first river kayaking trip of the year planned for this weekend. Let’s all pray for warm water.


Physical therapy: I am one week into physical therapy and am very happy with the results so far. I should shout out a big thanks to my hubby for holding these bands every night while I stretch them.


Greek yogurt dressing: My new favorite salad dressing is Bolthouse Farms Greek Yogurt Dressing. The cucumber dill is fabulous on smoked salmon salads.


Long holiday weekends: I am sure you love them as much as I do. So let’s all have some fun, relax, and enjoy!

Chili John’s Chili (only healthier)

Chili John’s chili is a very well known place in the Green Bay area and also the nearby surrounding communities. It has been around for as long as I can remember.

I recall my mom being so excited when I finally got my driver’s license because then she could send me to Chili John’s and get her chili in the middle of winter.

I used to love this chili, but always found the orange grease floating on top to be not the most appealing thing to consume. I know what your all thinking, “that is what makes Chili John’s chili so good.” Well maybe so, although, I was determined to find a solution and continue to be able to eat this chili without causing my arteries to harden.

My boys have asked for this healthier version every deer hunting season after they spend all day sitting in the woods freezing waiting for that big buck. I have also froze this recipe for a quick meal when life is just to busy.

It is so very easy, and does not call for many ingredients at all. Of course, you could make this with all ground turkey or all ground beef, but I have found it’s best with half of each.

Chili John’s Chili (only healthier)

1 lb. ground beef

1 lb. ground turkey

1 small onion finely diced

1 tsp. garlic salt

1 tsp. cumin

1 Tbsp. flour

1/2 tsp. black pepper

2 Tbsp. chili powder

1/2 tsp. salt

1/2 tsp. red pepper flakes

2 cups water

1 can of chili beans of your choice (optional)

Brown your ground beef and turkey, then drain any excess fat. Spray your crock pot with non-stick cooking spray and add all the browned meat, beans, onion and all the spices.


Cook covered on low for 5-6 hours. Serve over spaghetti.

**** I prepare this recipe often and store it in Ziploc Versa Glass dishes and freeze for the perfect grab and go meal when you need something fast.




Weekend Happenings

Friday night after a long week of work, and surprise landscaping that my husband decided we needed to do this summer, we went out for dinner. It was a new restaurant to us called Rustique Pizzeria that we actually taste tested at the Feast with the Beast Monday night.

We arrived and saw that they had a great outdoor seating option which we took advantage of on such a nice night.


Upon arriving, I noticed that almost every table had the same appetizer ordered. Pesto fries, which I had never heard of before. I knew there was no hope what so ever for us to order that, because my husband does not eat pesto. He claims it reminds him too much of the under side of a lawnmower!!! So, while reading the menu I noticed you could get a sandwich and add pesto fries for a small amount extra. (I have not eaten fries in years, but these sounded tasty and I love pesto, so I splurged) He ordered the margarita pizza, and I ordered the veggie sandwich and pesto fries.



Oh my, I was in heaven. They are everything I imagined, and so was the veggie sandwich. I even tasted his pizza, yum- yum- yum!

I told him anytime he wanted to go out, this would be my top choice of restaurants.

Saturday our son went sailing for the first time with some friends as a last hurrah before they all go their separate ways to college in a few weeks. Which left us alone. We decided to go fish Lake Michigan out of a different port this time.


We went past some cool tugboats along the way.



Although we did not have any luck catching fish, the water was perfect and the weather was tolerable. No rain just a little chilly at times.

It ended up being a nice weekend, with some well deserved down time to relax.
