Recent Meals….Still Learning To Cook For Two

I have been so busy that remembering to take a picture at meal time has been forgotten quite often. Although, don’t fret, I have been cooking as usual but gosh have things changed when it comes to cooking and grocery shopping.

Here are a few meals we have enjoyed recently. My husband has always wanted to take a steak, chop it up, and make a hamburger patty out of it to see what the difference is from ground beef. Well, this finally happened and surprisingly it was pretty darn good. I am not a big beef fan so I was hesitant to try it. However, I must admit, I believe we may have it again since it was so good. IMG_1363

One evening we had sweet chili chicken, couscous salad, and zucchini.

Another evening was lemon shrimp with capers and spinach over pasta.IMG_6939

And last I want to tell you about this fabulous sauce I picked up on my last trip to Trader Joes. Gyoza dipping sauce has become a new favorite around here. One night I prepared this chicken veggie stirfry and another night I finished the bottle by tossing together a chicken and leek skillet meal that we simply loved. Each took about half the bottle…so two meals out of one jar. Like usual, I wish I would have bought more but you never know when something new comes out if you will like it or not. However, I am already researching how to make my own Gyoza sauce….and it looks pretty darn simple. IMG_1384

Let’s touch on grocery shopping here quickly. In all honesty, I am still adjusting to buying and feeding two people at meal time. I even have found myself able to use a small cart at the store instead of the jumbo grocery carts. IMG_1362

It takes me less time to put groceries away once I arrive home. And I never use all my reusable grocery bags anymore like I once did before. And the bill at checkout time is a shocker…but I am loving it. So little by little I am adjusting to the new way of meal planning and shopping. Now if only they would make hamburger/hotdog/ and bread loaves in half sizes….I would be very thankful!

Mom….I’ll Make Dinner Tonight!

Apparently, many of you still would like to see this weekly posting about what I prepare for our meals so I will continue writing these. However, I cannot promise they will be as exciting come summer time since I would much rather be outside than in my kitchen cooking. That being said, with the way we now eat, I will still have to be in the kitchen somewhat everyday and would be happy to share what I come up with to eat with all of you.

Anyhow,  it’s been an exciting week for us all here. So much happened on all angles of life that the week flew by. Stressful but all good at the same time. Everyone in my family is finally happier and then I got my bonus for the week when my son announced to me that he wanted to prepare dinner one evening. I was all for it. I had mentioned to him I wanted to try making my own butter chicken and he took this suggestion and ran with it. It turned out really good and surprisingly enough even my husband liked it….since he is not a big fan of this type of food.

Here is what meals were at our house this week:

Saturday: homemade salmon patties…one on toast and one in a spinach wrap, with dill yogurt sauce, and potato leek soup (meatless technically, but it was fish)

Sunday: grilled chicken brats, basil dill coleslaw, and perogies

Monday: butter chicken, broccoli, and bulgar with a side of grilled naan

***You may ask why not on rice as its traditionally served. We have been doing our best not to eat rice since this is a high inflammatory food that seems to be a big trigger food for me. So we have been trying other grains and bulgar is one of our favorites.

***Also, I cannot take credit for this meal since our son prepared this for us for dinner tonight. He is quite the cook when he has the time which makes his mom pretty darn proud.

Tuesday: cheese tortellini with veggie marinara sauce and grilled flat bread (meatless)

Wednesday: chicken and homemade mac and cheese

We changed plans quickly due to some family logistics and had to celebrate a birthday dinner a week early so our son could join us. Sushi is what my hubby (the birthday boy) chose for his birthday dinner. IMG_9812

Food prep for the upcoming week looked a bit like this. I finally made my own spicy black bean burgers. We have yet to eat them but if they taste good I will share my recipe with you all in an upcoming post. If they are a failure, then back to the lab (my kitchen) it is to try again.

I also prepared some roasted veggies, quinoa, and an asian type sauce to drizzle over this for my lunches.

And the usual pre chopped veggies and hard boiled eggs were also prepared in advance for the upcoming week.

 

Two New Recipes….Only One Keeper

Lets see, this week started out rough….it’s hard when something so bad actually is really a good thing in the long run. I know, vague…. but that’s where I am right now in my life. Anyhow, back to the week….it all sort of balanced out this week. Some bad, some good, and there you have it, a perfect balance of life in general.

On the menu this week were two new recipes. One a complete flop and one a keeper for sure. Here is peek at our meals for the week.

Saturday: BBQ chicken pizza

Sunday: chicken pad thai (new recipe)

***This recipe was not a keeper for us. It was easy and fast but was lacking in flavor. We found ourselves doctoring it up with hot sauce,hoisin sauce, and soy sauce just to add some flavor. IMG_0491

Monday: slow cooker garlic chicken with green beans, carrots, and potatoes (new recipe)

***This one is a new favorite of the entire family. So tasty, and super easy. IMG_0492

Add Grilled Meals To The Menu Plan and What Happens…..An Ice Storm!

This week I thought I would change things up and add two grilled meals to the weekly menu. Well, apparently Mother Nature did not think it was time for grilled food since the first meal I had planned also brought and ice storm that same evening. Thankfully dinner was done before it got too bad outside, but come morning this is what we all woke up to.

(***Note: the bed sheet on the window of our son’s car is so he would not have to scrape his windows at 5a.m.. It works just like a tear off….sweet trick if you hate scraping your windows)

Thankfully, both my husband and son each stayed home from work and did not have to travel in this winter mess.

Besides that one evening of grilling misery, we also enjoyed a few more meals that were easy to prepare. Take a look….

That should do it for this week. I can’t wait to trade in my whisk for my hiking boots and blog about something a bit more exciting than food. Sadly though, I still find myself deeply searching for new and exciting recipes to serve my family rather than researching trails to visit in our area that we have never seen. Spring has not arrived quite yet, but for now I am just hanging in there and waiting patiently.

 

 

Going Meatless Is Getting Easier

I don’t know if my family is just agreeing with me to shut me up or actually converting over to meatless meals because I will not give up on this mission. However, I am happy to report that so far they have been very agreeable to what I have been trying. Since they ultimately are my guinea pigs at dinner time, I try and keep my new meatless recipes to our weekend dinners so we always have the option of ordering out if they fail. So far, we have never ordered out…success!!! And I am still getting over the shock of my son trying my veggie burgers and eating two of them without complaining, gagging, or throwing them out. I even got a,”hey mom, you can make these again.” YEEEHHHH!!!!!

So once again, here is what we enjoyed for meals this week.

Sunday meal prep for the upcoming week included:

A new banana muffin recipe and I also threw together Sunday nights meatballs so I would not have to prepare them later that evening.

I pre chopped all our veggies for the week, cooked up chicken breast for wraps which my son takes for his lunch, and made up 6 veggie egg cups for a fast breakfast before I head to the gym at 4:45 a.m..

The only thing I did not do for the upcoming week is make something for my lunches but I know the menu I have planned will offer plenty of leftovers and this is what I plan to eat during the week.

 

Weekly Meal Plans….Back By Popular Demand/Weekend Recap

Our weekend started off as a weekend away camping…..and was changed mid week due to weather concerns. Whomp Whomp! So my husband who was suppose to be setting up our tent to sleep in, instead started preparing his ice fishing supplies by setting up his ice shack instead.

Then I had planned a night away with a friend….and this was changed last minute due to illness! Whomp Whomp!

So ultimately, I was home all weekend. I started Christmas shopping, I ran some errands, I got in two awesome workouts at the gym, I took care of some daycare business, and the hubby and I hiked a nearby trail together.

Not the weekend I had planned but you know, life happens and plans change and you sometimes just have to roll with it.

Anyhow, lets move on. I have had a few requests for our weekly meal plans again. I used to post these but never really thought anyone followed….I guess I was wrong. And now that we follow an artificial sweetener free diet, my meal plans have been changed up and I have found myself revamping many recipes I have prepared for years to be much cleaner than before. So back by popular demand, I will be posting my weekly meal plans for you to read. I will not be including recipes but if you find something that looks yummy, don’t be afraid to ask what the recipe was. I will be happy to share anything with you.

Saturday: dill caper farro, grilled salmon with lemon and onions, and baked squash.

Sunday: fajita brats with onions, peppers, and mushrooms, over quinoa

Monday: mexican tortilla stack(meatless)

Tuesday: stuffed manicotti with cottage cheese, spinach, mushrooms and pesto, with marinara sauce and melted cheese over the top. served with bread sticks (meatless)

Wednesday: cowboy caviar filled wonton cups and side salads

You will find that two nights a week we try and eat meatless meals….more if I can get away with it but my husband and son like their meat. And every meal is made strictly without the use of artificial sweeteners so my husband does not feel ill. If you missed why this diet change happened you can read about it here.

I will try and post our weekly meal plan on Sundays. Our week typically runs from Saturday to Friday since I almost always grocery shop on Fridays for the following week. Let me know if you see something you like. And by all means, if you prepare something yummy please share it with me….I am always searching for meals to prepare that are as clean as possible so everyone is happy.
