August Already??? How Can That Be?

Where has summer gone? It’s August already I am not ready for summer to be almost over! Although, our August calendar is full and September is filling up quickly so maybe the best of summer is yet to come.

Alright, I know its been a while but life got a bit hectic once again. I flew solo this past week since my husband was once again on the road for work. Which meant we did all we could to get everything done that needed to be done and also spend a day together before he left. We decided to float the river once again since its relaxing and we both needed a few hours to relax.

It was a floating trip that paid off since he found a very nice fishing lure stuck in the bottom of the river. IMG_1398

Then the week happened and it was busy! Hence why there was no postings last week. I simply did not have time to sit and type.

Friday then rolled around and as he was on his way home making his way through airports, I was packing and preparing for our weekend. We had a day planned at a friends cabin that was sure to include water, sun, and campfires! I threw together a quick broccoli salad and grabbed the beach towels and sunscreen. IMG_1425

We left a bit early since I had my heart set on stopping at the farmers market near where we were headed. I bought a bunch of fresh veggies for the week ahead.

We then arrived at the cabin to find sunshine and warmth. This is not always the case here since it’s often cooler by the lake, but I was happy today was not one of those days. We boated, stopped at the beach, and prepared dinner on the open fire.

It was a great day. Weather was perfect, company was fun, and the water was warm. What more could we ask for?

Sunday was then catch up on chores day. We typically have one day of play and one day of work every weekend. I prepared baby food, veggie dip, and pre chopped veggies for the week ahead. My husband did oil changes and other things on his “Honey Do” list like normal. This week is jam packed with stuff. Our annual date event we go to is this week, we also have plans to visit somewhere we have never been. And believe me, we have been almost everywhere in WI….and surrounding states. So I am excited to explore more of what our area has to offer. Hopefully the weather cooperates and I will have something fun to share with you all real soon.

Happy Spring Everyone!!!!!!

Spring has finally arrived which means I SURVIVED ANOTHER WISCONSIN WINTER!!!!!!

It is always a great feeling when another winter is behind me. I can’t wait to go to farmers markets, see bright flowers, sleep with the windows open, have picnics, and so on. What is there not to love about Spring?

I celebrated Springs arrival this weekend by first assisting with some yard work.

Then we slipped on our hiking boots and visited a trail that is off limits in the heat of summer thanks to an over abundance of snakes. IMG_3729

I went to lunch with some friends and enjoyed a healthy veggie wrap and pasta salad.

Visited a “new to us” library for some audio books for my husband and some new story books for our spring break week this week. IMG_3721

Visited the gym for a workout with my hubby.

And the rest of the weekend was spent relaxing.

Warrens Cranberry Festival With The Girls….

I had the pleasure of escaping for an entire day and attending Cranberry Fest  in Warrens, WI Saturday with two friends of mine. We very rarely escape for a girls day and I really think we need to do something about that because we had a wonderful time. We boarded the tour bus from DePere, WI at 7a.m. and were off for a day of fun.

We arrived at the festival about three hours later and the grounds were already swarming with loads of people eager to spend some money. As far as you could see up the street it was shoulder to shoulder festival goers and we wasted no time jumping right in.

At Cranberry Fest you will find just about anything and everything you can imagine. From farmers market veggies,  IMG_2716

It was a gorgeous day. After 7 hours of walking, shopping, eating, drinking, and laughing our way through tons of craft vendors, we again boarded our bus for a relaxing trip back home.

We already have our fall destination picked out for next year but hopefully we can work in one more girls day before then.

Monthly Health Challenge- September 2015

If you did or tried last months health challenge you should be accustomed to having many veggies in your home which will make this new health challenge a breeze.

September Health Challenge Is: Eat 3 different veggies per day.

Many times when we have a vegetable at meal times it is the same vegetable throughout the day. Let’s make meal time a bit more colorful and have a different vegetable at each meal during the day. This could be as easy as carrots and hummus for snack, cucumbers and salmon for lunch or roasted brussel sprouts with dinner.

Or if you are really struggling to have a vegetable at each meal, pack all three together at one meal instead. Try roasted potatoes, squash, and onions for a side dish or kabobs are also a great way to mix up a few vegetables at one meal.

It’s fresh veggie season and soon it will over so let’s enjoy every last minute of it together.

Monthly Health Challenge- August 2015

It’s that time again….another new month is upon us which means it’s time for another monthly challenge. How many of you struggled with last month? Was cutting back or giving up soda difficult, rewarding or both? Well, no worries, this months challenge should be a little easier for everyone.

The challenge for August is : Have a salad for 1 meal a day.

This should take very little effort to achieve. Farmer’s markets are bursting with wonderful, fresh veggies. There are road side stands selling veggies everywhere and if need be, your local grocery store has veggies year round. If you spend a little time preparing, chopping, washing, and cooking one day a week, throwing together a salad for a meal should only take you minutes.

If you have more time and are creative you could even try making your own dressings to top your salads. And please, if you do this don’t be afraid to share your recipes with the rest of us:)

Weekend Snapshots: Farmers Market/ Ice Age Trail Hike/Pier Walk

With temps in the high 80’s Saturday and humidity levels up there I decided it was time to get some things done around the house this weekend. I was feeling very Martha Stewart like for some reason. My husband tried really hard to get me to go fishing and wade through the river with him but I refused. I know from past experience that this river has snakes along the edge and I am NOT getting stuck in a river with no way of running for my life to escape these slithery reptiles. He was on his own and so was I, which sometimes is pretty nice. First, I made a trip to my favorite farmers market for some veggies. IMG_1764

After that I came home threw in the laundry and started cooking and preparing things for the week ahead. IMG_1772 I then rearrange my workout area to make room for my husbands new inversion table. He was taking up space in my yoga area so we needed to fix this asap.  IMG_1749 Then I cleaned the entire house before it was time to make a nice dinner to be eaten alone. I decided lemon, dill, shrimp fettuccine sounded fabulous with sauteed zukes and onion from the market. Yummmmmm!

After that it was a 3 mile walk in the heat of summer. I love summer, the hotter the better.

Sunday brought another hot, humid day. Although, that did not stop us from hiking 5 miles down the Ahnapee State Trail also know as the Ice Age Trail.  IMG_1780

We began todays hike at HWY 42 and Cty Rd H. There is a very nice parking area with the cleanest public bathrooms I have ever seen in WI.

We found a few geocaches along this stretch and only one snake. One too many that is:)

The trail in this area is completely flat, crushed rock. We saw no other hikers but we did come across a few bikers. It was pretty warm and buggy but still felt great to be on a trail again.

After our hike we made our way down the road a ways to Kewaunee, WI for ice cream and a cool walk down the pier.

Then it was time to head home for the day.

It turned out to be a great weekend. The sun was shining, my husband did his fishing, I did my cooking/relaxing/cleaning, and we hiked a good hike in the heat preparing for our upcoming trip.
