Final Health Challenge of 2015

It’s December and time for the final health challenge of the year. This one could be a bit difficult especially with all the added holiday things everyone needs to get done. Although, I do believe it is one that is very important since many families loose touch with each other during this time of year.

Decembers Health Challenge Is: Family dinner at the dining room table 2x’s a week.


No television, no phones, no laptops, no electronics, just dinner with the family. Hold a conversation with your husband,wife, children, parents etc. Talk about work, school, the holidays, outdoor activities etc. Family dinner can be the best part of any day if you allow it to happen. Make this a priority in your family just twice a week for the next month. I bet you will enjoy it so much that you may even continue into the new year.


Monthly Health Challenge- August 2015

It’s that time again….another new month is upon us which means it’s time for another monthly challenge. How many of you struggled with last month? Was cutting back or giving up soda difficult, rewarding or both? Well, no worries, this months challenge should be a little easier for everyone.

The challenge for August is : Have a salad for 1 meal a day.


This should take very little effort to achieve. Farmer’s markets are bursting with wonderful, fresh veggies. There are road side stands selling veggies everywhere and if need be, your local grocery store has veggies year round. If you spend a little time preparing, chopping, washing, and cooking one day a week, throwing together a salad for a meal should only take you minutes.


If you have more time and are creative you could even try making your own dressings to top your salads. And please, if you do this don’t be afraid to share your recipes with the rest of us:)

Celebrating Some Small Victories

I feel very accomplished this week. Nothing big and exciting, just some things that have been weighing on my mind have been taken care of.

Victory #1: After three stores and some of the saddest looking plants I have seen in green houses in years, I finally have my planters done. Thankfully, I don’t have a very green thumb which means I did not need many to fill up my two planters. Not a big chore off my list but it at least is done and crossed off. IMG_0933

Victory #2: We have started walking again this week(with boot on) and I have lost all three pounds I gained while sitting for a month. Hurray…..I knew it would come right back off but there is always that little doubt in the back of my mind.

Victory #3: I have had an Amazon order sitting on my “to do” pile for weeks and I finally placed the order this week. Most people love online shopping. For me, any shopping is quite the chore.

Victory #4: I purchased my first watermelon of the season this week. This is not really a victory but it does (in my mind) mean that I have really survived another WI winter. I love summer and nothing says summer more than a big, red, ripe watermelon! IMG_0940

Victory #5:  We have finally had time as a family to sit down and discuss a training plan for…..wait for it…….yes,another BIG ACTIVE VACATION! This time we are all going and it shall be an adventure. I know your probably wondering why I would plan an active vacation with being injured and all, but to tell you the truth, it was planned awhile ago. I am not too worried about not being able to accomplish what’s ahead however, it may take me awhile longer to train with my husband and son at their level. I have another week before I can remove this boot and start strengthening my ankle again. Moderation will be my goal.

Like I said, nothing too huge or exciting for that matter. Just a few things I needed to get done and now they are off my mind.

For now I will wish all the mom’s a wonderful Mother’s Day and I’ll be back next week with another DIY freezer bag backpacking meal and a great family friendly campground recommendation for everyone.

What’s For Dinner?

Guess what? We found our grill way back in the garage buried in the corner. My better half said he would stand outside and freeze to make his better half happy by cooking dinner a few times this week. Whoooooo Hooooo! Can you see how very happy this makes me:) So here we go, a little taste of what our meal plan for the week looks like here.

Sunday: grilled salmon burgers, sauteed zucchini, mushrooms, and onions with garlic couscous

Monday: grilled chicken and steak fajitas with all the fixings

Tuesday: crock pot scalloped potatoes and ham

Wednesday: sushi


Thursday: grilled BBQ chicken thighs, roasted broccoli and farro

Friday: organic beef meatloaf, mashed potatoes and side salads

Saturday: make it yourself or starve:)

This Weeks Dinner Plans

As I mentioned last week, I will start posting our dinner plan on Sunday’s to inspire you all to prepare and enjoy a nice meal at home with your family and also to show you that with just a little planning dinner is possible with a crazy lifestyle.

Here is our plan for the upcoming week:

Sunday:  Sloppy Joes, baked beans, sweet potatoes fries

Monday:  Curry chicken over rice with broccoli/carrots/cauliflower

Tuesday: Chicken tortilla soup and crusty bread

Wednesday:  Crock pot beef stew

Thursday: home made spinach and chicken pizzas

Friday:  Roast beef and gouda panini with roasted brussel sprouts

Saturday: make it yourself or starve:)
