What I Am Loving Lately….

With the season changing there are many things that are making a comeback into my life. And a few things that are also new that I would like to share with you all.

Here are a few…

Iced latte’s: yum, yum, yum! I think I would drink coffee chilled all year long if I didnt love the warmth of holding the hot cup in the early mornings during the winter months. So summer time is when I really enjoy my iced coffee.


Rainbow of colors in the yard again: We are finally outside on a daily basis playing and enjoying the fun colorful toys we have not seen in months. Another winter stuck inside officially survived by us all.


Tribe Hummus: During the week I get very little peace and quiet which is why I truly love to lay everyone down for nap and step out on the porch for an afternoon snack. My go to snack lately has been this hummus in the cucumber tzatziki flavor. It takes complete self control not to eat the entire container by myself.


My dream play house: I know what your thinking, a dream play house! Let me explain. Do you know how great it would be for our play area to be separated from my families living space in our home. Having an in home daycare is not all rainbows and butterflies. I often (always) feel like I NEVER LEAVE WORK. Which is one of the reason I am very rarely home on weekends since its the only time I feel like I get to leave my “office”. Which is why I fell in LOVE with this when we were walking one day on a recreational trail nearby. I think this would be PERFECT. Ahhhhh, pipe dreams….they are wonderful.


Argan Oil from Morocco: I am not a fashion or beauty expert by any means but lately I have been searching for something to help tame my hair frizz. Since surgery, back in January, my hair and skin have been so different. I am thinking its hormone related but gosh nothing seems to tame the frizz. Until, I came across this product. It’s in a small amount so if it did not work I would not have ANOTHER bottle of useless product and its was fairly cheap at $2.99 a packet. I am able to get three uses out of one packet for my hair length and let me tell you…..it smells wonderful. Like the tropics, the only thing missing is the drink on the beach with an umbrella in it. And it tamed my frizz in one use….which is awesome. I am sold and have already bought more.


Cacala Turkish towels: I bought these a few months ago and finally had a chance to use them while camping recently. Apparently, they were suppose to absorb water remarkably and dry in a very short amount of time. Plus, they are light weight and fold so much smaller than a bath towel. Well, after giving ours a try, I can attest to all these things. We used both of ours camping for showers and dried them on a clothesline in approximately 30 minutes or less both times. They are huge and do really absorb water nicely. I can’t wait to use them at the beach this summer.



Roasted turkey sausages: While sitting near the campfire one evening my husband got this bright idea to try roasting one of our turkey sausages that we often enjoy on the trail. I was willing to give it a try but I was not quite sold on the idea until after trying them. They were spectacular. I would even say they were better than last years invention of roasted marshmallows stuffed with bacon bits(alcohol was involved in this creation). If your ever in the mood for a mini hotdog I would gladly suggest giving this a try.


That should do it for the things I am loving lately.

Recently, I feel like so much has happened. We have been so busy with so many different things that I feel like we should do some catching up. So grab a cup of coffee and let’s do just that.


We finally started constructing jig saw puzzles. This has been something that I found takes my mind of the never ending winters here in WI. Although, so far this winter has not been too bad, we did decide to still start one a few weeks ago. IMG_3032

Do you remember that travel bug we found a few weeks ago geocaching? Well, we finally placed it in a different location on Christmas day during our family outing. It was so cool to see that it was all the way from the Netherlands.


As you all know, I try and add to my home gym around the holidays. This year my family was nice enough to get me three things on my list. I was gifted a 15lb. kettlebell, a 10 lb. weight plate and a thicker mat. All of which I have been using to come up with a few new routines to keep my home workouts fun and exciting.


Even though date nights are pretty non existent in our lives right now, we are still finding time for the occasional meal out together. We recently stopped at my husbands favorite BBQ restaurant after a very long night of vehicle shopping. It was the perfect way to end a frustrating evening. IMG_3056

Speaking of vehicle shopping….we finally bought a third vehicle for ME!!! I have gone without my own vehicle for almost three years now and finally said enough was enough. It was not an easy choice however, since we were pretty limited on what had the towing capability to tow our boat and did not come in a pickup truck. Plus, I dislike many of the full size SUV’s that are out right now. However, after our last test drive we both knew this was the vehicle for us at this time. It even offers a bonus being it’s AWD, so now when the snow flies and the roads are treacherous my husband and son will both have a vehicle capable of getting them back and forth to their jobs. Which means I can worry a little less. So far I am quite happy with our choice.


Something unbelievable happened recently also. I had a friend join me on a nature trail for a hike and we had the best time. She has just recently started to realize how wonderful exercise can make a person feel and when she mentioned maybe hitting a trail together I was all in for this plan. During our hike we came across this gorgeous snow owl. Amazing!


Not many of our friends enjoy hiking so it was awful nice to enjoy this hike together.

What I’m Loving Lately

Here is another version of what I am loving lately.

Gas Prices: Did you EVER believe you would see gas under $2 a gallon again? Not me….but it is I could not be happier.

Blueberry Bliss Luna Bars: Yummmmmm. Luna bars have become my go to bar when I need a quick snack. I love both the lemon zest and now the blueberry bliss flavors. Give them a try, I think you will be happily surprised:)

Spring: Officially arrives in 64 days.

Laughing Cow Cheese Wedges: I found a new snack that is tasty, easy and healthy. I unwrap a wedge of Laughing Cow cheese , top it with salsa and enjoy with pretzels. These wedges are perfect because they are individually wrapped, easy to grab and go and don’t need refrigeration until after you open it. Plus they have an assortment of different flavors to choose from.

Health food and workout clothing is all on sale: One nice thing about the new year is these two items go on sale for all the new year resolution people. However, those of us that are already health freaks also get to reap the benefits:)

Spark Recipes app: Lately, I feel as if I have been in a recipe fog. I am tired of everything we normally like to eat and can’t seem to come up with any new ideas. That is until I came across the app Spark Recipes. This has been a great tool for sparking my love of being in the kitchen again.

Cinnamon in my morning coffee: Recently, I have had this craving for cinnamon so I decided one morning to add a sprinkle to my morning coffee and was very pleasantly surprised.

Wanted: Advice From Fellow Backpackers/Campers

We are seeking some advice from our fellow backpackers and campers out there in cyber world. I know many of my readers are also campers and backpackers so we are hoping you can and will give us your opinions and advice on a few topics.

We are looking forward to a big backpacking trip in a few weeks and are struggling with a few details. Some more important that others, however, all that we need advice on.

First, do you use a utility cart of some sort to help haul supplies to your campsites? Recently we were hiking in a park where all the sites were hike in destinations and I was amazed at the number of people that had utility type carts that they used to help them get supplies to there campsites. We have yet to do a hike in campsite ourselves but in a few weeks it is going to happen. Now, we are by far ultralight campers, but this sure would make things easier to get some of our bigger gear to our site rather than on our backs. What are your feelings on this topic? Please tell us what you have tried, used or did to accomplish a hike in site with all your gear.

Second, what dry shampoo would you recommend? This one is probably more for my fellow female backpacker/campers but guys if you have an answer for me please go ahead and speak up. We will be camping for a few nights where there is no running water within a few miles. I don’t plan to be doing my hair, looking my best or attending any dinner parties back in the wilderness. However, I know I will be dying to wash my hair after two nights and this will be my only option. Does anyone have any recommendations for good dry shampoos to pass on to me?

Our final questions is what type of instant coffee do you all prefer? We have tried a few in the past and the best so far is by Trader Joe’s. There is one big problem, Trader Joe’s does not ship and we are a few hours from the nearest one to buy more. We know we don’t want to buy a camp size brewer simply because why carry more than we have to. So instant we can settle for but what brand is the best. That’s what we are counting on all of you for. Give us your opinion and we will give it a try and see what we think.

That’s all our questions. Nothing too serious or important for that matter. Just some things that we have been thinking about.

Our Annual Mother and Son Day

Every summer I take a day off of work to spend with just my son. No one else is invited to join us, it’s just him and I. This summer was just a little extra special because I figured since he was 18 now, he would not want to spend a day with his mom. Then just a few weeks ago he surprised me and said he still wanted to have “our day” so we did just that.

It started out as always, a trip to the dentist bright and early. From there we headed to Door County with the truck loaded with one kayak and the stand up paddle board. Our first stop was Door County Coffee for a treat.


He ordered the orange creamsicle , and I had an iced latte.


We arrived in our favorite town, Ephraim, about 9:30am.


We unloaded and started paddling. It took us about and hour to reach the island we had as our destination.  When we got there we switched and he paddled the board back and I took the kayak. When we returned to the beach we beached the kayak and just had some fun with the board.

After a few hours, it was time for lunch. We loaded up the truck and changed. Then headed to our favorite restaurant. The Chef’s Hat.


We fell in love with this restaurant a few years ago, and just can’t say enough about the freshness of the ingredients. This is one spectacular place. We both ordered the same sandwich, roast beef gorgonzola melt. This comes on a black bean salsa bread which is so different but adds so much to the sandwich.


Oh, and we also had to order one of the huge cinnamon rolls they have that we share every year.


Yes this is terrible for me, and yes I know this. Regardless of what I think, my son says that there is 365 days a year and this is the one day I need to just say “screw it” and eat some fattening, not very good for me, food. I try, really I do, but the guilt drives me crazy. I did eat my half, and then it was time to burn it off.

We headed to Peninsula Park next. They have a tower we like to climb and look out over the water.

Next it was time to pick up a few things that I can only get in this area, olive oil, wine, and some blueberry jam.

Of course, now that it is a few hours later, after our terrific lunch, he suggested we go for ice cream. Real ice cream, which I typically don’t eat either!!! I knew I would get the same lecture 365 days a year and……… yeh yeh whatever, let’s just go. So we arrived at Dippy’s Ice Cream Shop.

Oh my,what to have. So many choices. I knew healthy was not an option, so I just did it, said screw it, for my son. I had “cookie dough” and he had “heaps of love” ice cream in a waffle cone.

IMG_2557 At least we walked while we ate so technically we were burning the calories as we were putting them in. (Although we probably should have jogged) We walked all the way to the end of the street to the beach and sat on the stone wall over looking the bay and ate our wonderful cones together.


That’s when it struck me. I can burn the calories off from today on another day. I may never have this moment again with my son. I just simply enjoyed the moment for what is was.

All in all it was a wonderful day we had together. Hopefully he finds time to be with his mom in the summers to come. Although, if not, I have some great memories of the ones we have had already.
