Let’s chat a bit over a nice cup of hot tea.

Hunting season is in full swing and this is a big stress topic for me. I am not fond of hunting…well not really hunting per say….just the part that includes the gun! So for me, when my husband says he is going hunting for the day…the busier I can keep myself the better I will be until I see him arrive home safe and sound. And hiking during hunting season offers a bit more stress since I often think the gun shots are closer than they actually are. Soon we will be adding blaze orange to our hiking attire to hopefully not be mistaken for an animal and shot at.

Then you have the colors that are changing in the trees surrounding our state. Which is a photographers paradise….and our son is a photographer. Well, this also brings stress for this here mom since the same place my husband stumbled across a bear while hunting, just so happens is the same place my son says he is going to try and capture some fall photos. And let’s face it, a camera is far from carrying a gun for protection….so at least he asked dad to join him(with the gun) and he armed himself with the bear spray. I was a bit more at ease then.

You all won’t believe what I received in the mail this past week. A “save the date” invitation for an upcoming wedding of one of the first children I ever cared for in my home. OMG, did this make me feel old. Even though I knew she had gotten engaged, had introduced me to her fiancee, and I even got to see the ring…..the invitation is what really made me think back and just say WOW….I have cared for children for a long time!!!!

I am learning more and more every day how to live with my new limitations since going through major surgery 8 months ago. I am not going to say I like it by any means, but I am learning to live with it. I am still not up to what I weight lifted prior to surgery, which in all honesty, I don’t think I ever will be back to where I was. Although, I am ok with this since weight lifting was never my favorite anyhow. Yoga is a challenge….especially on my right side. However, I am not willing to give up yet on yoga since it brings me such calmness and peace. I do what I can and accept it for what it is. I am happy to say my cardio is back where I left it and even more on some days. This is awesome, since cardio is my favorite, stress relief.

Even though fall officially just started….I really miss summer already. Like, REALLY miss summer!!!!!

That being said, we are in full swing of some big home repairs and this makes me very happy. I hate summer home repairs, so we put them off until the fall and go crazy during the weekends.

Have you all seen them….these mini 100 calorie bars of yumminess? I am by no means a chocoholic but when I am craving chocolate I will eat it no matter what the calorie count is and later feel guilty. I came across these in the store the other day and grabbed 4 bars just for me. Now, when that moment hits and I NEED chocolate, I can eat one of these with very little guilt.

I have to say, since the weather has gotten cooler I have found myself rotating some of our favorite stove top and casserole type meals into our weekly meals plans. Summer is when we grill often and I rarely make casseroles.

Has It Really Been A Month Since I Walked A Trail?

Our weekend started with dinner out on Friday night. Friday was a long day for me….so when my hubby said let’s just go out for dinner, I put up no argument at all. I love that he knows just when to suggest things like this.

Which brought us next to Saturday morning. I had a list a mile long to do including a pharmacy stop, shoe shop, finish Christmas shopping, bank, and something active that did not include spending money….like more shopping. Unlike most women who love to shop, I am not one of them. Especially when it comes to shoes, since I have very difficult feet to keep happy. To say I was dreading today’s shopping trip, unlike last weekends shopping experience, was putting it mildly. Although, when my husband offered to join me and assist with gift buying I was a bit happier.

However, first things first, we started our day in 20 degree temps on a nearby trail for a 3 mile walk.

IMG_2901I have not been on a trail in over a month and even though it was quite chilly, I completely enjoyed ever second. What a great way to start a day.  IMG_2906

After our trail walk, we hit the stores and malls full force along with every single other person in Green Bay or so it seemed!!! It was so crazy out there. We completed our list in a few hours and this made us very happy. After all that shopping I brought my very stressed husband home and made one last stop at a chocolate shop for some last minute gifts.

Sunday was our quiet day. I started a new job Sunday morning that I accepted earlier in the week. Let me just say, it sure felt odd to leave home to go to work since my “work” has come to me for the past 20 years. It’s a very minimal job opportunity that I felt can really benefit my future plans, so I accepted the offer and so far so good. We’ll see how it goes.

After working my husband and I made a trip to the gym for a workout and then we returned home for some quiet time. Our son had also started a new job last week and having him home during the day was a bit strange but nice. We actually had some time to talk instead of just passing by each other in the same house. All in all it was a great weekend.

 

 

 

Silver Creek Park Disc Golf- Manitowoc, WI

We have been to many disc golf courses in our area. Recently we visited Silver Creek Park Disc Golf Course for the first time in Manitowoc,WI and I am very happy to announce I have a new favorite.

This place has everything I love. It’s like disc golfing while hiking. Upon arrival you will head to the field house.

There is a nice parking area here and bathrooms on the side of the field house. I suggest using them as this is a 27 basket course. IMG_1152

Your first basket is located a short walk from the parking area. Take a look at the map provided and watch for a bright yellow donation can at basket #1.

My first impressions were wonderful. Trees were everywhere and water hazards are located at many of the baskets.

There are hills around every corner….and when I say hills I mean HILLS. Here is basket #13. If you over throw your disc you are going to be making a long hike down to then again make the long hike back up to finish the round.

Then you move onto basket #14 to then make the throw across the soccer field from the top of a big hill over across to the the rivers edge. All while making sure you don’t over step the tee pad or you will be taking a tumble down the hill yourself.

You will eventually cover this entire park from every angle. There are bridges to cross under

and then over.

There are baskets that bring you right along the Lake Michigan shore

with one basket that you will be throwing your disc straight at the lake with very little room for mistakes.

You may even get lucky and run into some wildlife while playing here….we did.

All in all I would say this course is one of the very best we have ever played at. The signage is spectacular and the terrain is a great workout.

There is no doubt that you will enjoy playing here. However, I would make a few suggestion to anyone thinking about visiting. This course is steps from the Lake Michigan shoreline which is always cooler than inland. A light jacket may be appropriate. This is also a very long, strenuous course with numerous hills. You may want to have a snack with you for refueling. We actually played the first 14 baskets which then brought us back near the parking lot where we stopped to have a quick snack before finishing. (we packed some snacks ourselves and had them in our vehicle)

And one more thing…..if your find yourself searching in the tall grasses/wooded areas watch for poison ivy…..it’s everywhere!

Graduation Party /Four Layer Bars

This past Sunday we held a graduation party for our son at a local paintball establishment. It was 89 degrees, sunny and extremely hot. With all the added long sleeve and long pants everyone had on for extra protection, it made for an exhausting day for everyone. Although, everyone seemed to really enjoy themselves.

In between every playing field they reloaded their guns and themselves with water.

After four hours of playing it was time to eat. Thankfully they had canopies set up for us to sit under and enjoy everyone’s company.

It was a great turn out and we want to thank everyone for sharing this occasion with him.

My son requested these bars for his graduation party, and I was not surprised. Ever since I found the recipe on the back of the marshmallow bag years ago, he has requested these for every occasion possible. He loves them. They are super easy and fast.

Four Layer Bars

1 pkg. (2 layer size) yellow cake mix

1/2 cup (1 stick)butter or margarine, melted

1 egg

3 cups miniature marshmallows

1 cup chocolate chips

3/4 cup cocktail peanuts

Preheat your oven to 375.

Mix the cake mix, egg and melted butter together to make the crust.(Do not add the cake ingredients on the back of the box)

Spread onto the bottom of a sprayed 9×13 baking dish.

Bake this crust for 16-20 minutes.

When its finished take it out, and top with the marshmallows, peanuts and chocolate chips.

Return it to the oven for an additional 3-5 minutes or until the marshmallows begin to puff.

Remove and let it cool completely before trying to cut into servings.

NOTE: For easier cutting, spray your sharp knife with non stick cooking spray a few times.

No Guilt Fudge Brownies

Here is a great, easy recipe for lowfat fudge brownies that you won’t have to work an extra hour at the gym to burn off the calories.

No Guilt Fudge Brownies

BROWNIES:

1c. all purpose four

1 cup brown sugar

1/3 c. unsweetened cocoa powder

1/2 tsp. baking soda

1/4 tsp. salt

2 large egg whites

1/2 c. unsweetened applesauce

1/2 cup skim milk

2 tsp. vanilla

FROSTING:

1 1/2 c. powdered sugar

1/4 c. unsweetened cocoa powder

1 tsp. vanilla

2-3 TBSP. skim milk

Preheat your oven to 350. Spray a 9×9 baking dish with nonstick cooking spray.

For brownies, mix together the flour, brown sugar, baking soda, salt and cocoa powder.

Measure out the wet ingredients.

And combine them all, mixing till it’s smooth.

Pour this mixture into your prepared dish.

And bake for 30 minutes or until a tooth pick inserted in the center comes out clean.

Let brownies cool before frosting.

For the frosting, measure out the powdered sugar and cocoa powder.

Add the vanilla and milk slowly and mix till smooth but not to runny.

Frost your brownies and refrigerate til the frosting sets. 20 minutes or so.
