Feeling Almost Back To Normal

This week has been good. We are finally feeling almost back to normal. By this I mean, meals were shared together, exercise routine is back to an actual routine, and peaceful sleep was had all week long.

Let’s start with exercise shall we. Typically, I workout in the early morning hours at our local gym….by early I mean 5:00a.m.. With summer here my job gets much more physical when we can finally get outside and enjoy the outdoors instead of everything indoors like during the winter months. So during the summer I concentrate on making it to the gym twice a week in the early morning, I then bike on my stationary bike the other two mornings, and one day I take off for rest….not from work just from exercise. And then my husband and I have begun walking area trails for about 3 miles after dinner. Add this with many additional steps put on during the day while playing outside chasing daycare kids around and by 8p.m. I am typically falling asleep on the couch.

As for meals, I finally feel like we are eating regular and not grabbing and going to the next thing on the agenda. If you have been a long time follower you will know that grabbing and going is not easy with my husbands artificial sweetener allergy so this has been a real struggle to keep juggling. Although, I am happy to report we are back to eating regular meals and enjoying the time to sit, eat, and chat about our day. One the menu this week was a new lentil ham soup and BBQ chicken quesadillas. Both turned out fabulous!

That will be it for today. We actually have plans on the calendar for the weekend…..finally!!!!! Now I am just praying for no rain and sunshine so I don’t freeze since we will be enjoying some water play. It is summer after all, so that means it’s time to enjoy all the rivers and streams Wisconsin has to offer.

 

Recently….

Recently, I feel like so much has happened. We have been so busy with so many different things that I feel like we should do some catching up. So grab a cup of coffee and let’s do just that.

We finally started constructing jig saw puzzles. This has been something that I found takes my mind of the never ending winters here in WI. Although, so far this winter has not been too bad, we did decide to still start one a few weeks ago. IMG_3032

Do you remember that travel bug we found a few weeks ago geocaching? Well, we finally placed it in a different location on Christmas day during our family outing. It was so cool to see that it was all the way from the Netherlands.

As you all know, I try and add to my home gym around the holidays. This year my family was nice enough to get me three things on my list. I was gifted a 15lb. kettlebell, a 10 lb. weight plate and a thicker mat. All of which I have been using to come up with a few new routines to keep my home workouts fun and exciting.

Even though date nights are pretty non existent in our lives right now, we are still finding time for the occasional meal out together. We recently stopped at my husbands favorite BBQ restaurant after a very long night of vehicle shopping. It was the perfect way to end a frustrating evening. IMG_3056

Speaking of vehicle shopping….we finally bought a third vehicle for ME!!! I have gone without my own vehicle for almost three years now and finally said enough was enough. It was not an easy choice however, since we were pretty limited on what had the towing capability to tow our boat and did not come in a pickup truck. Plus, I dislike many of the full size SUV’s that are out right now. However, after our last test drive we both knew this was the vehicle for us at this time. It even offers a bonus being it’s AWD, so now when the snow flies and the roads are treacherous my husband and son will both have a vehicle capable of getting them back and forth to their jobs. Which means I can worry a little less. So far I am quite happy with our choice.

Something unbelievable happened recently also. I had a friend join me on a nature trail for a hike and we had the best time. She has just recently started to realize how wonderful exercise can make a person feel and when she mentioned maybe hitting a trail together I was all in for this plan. During our hike we came across this gorgeous snow owl. Amazing!

Not many of our friends enjoy hiking so it was awful nice to enjoy this hike together.

BBQ Rub

As grilling season approaches I get pretty excited about the break I get from cooking dinner every night. I am not a grill master and have no hope to be in the future. However, my husband does a really nice job of grilling. On a good day he may even get creative with the spices.

Here is a BBQ rub that he made after reading a few different recipes for some ideas. Then I borrowed out my lab (my kitchen) and he mixed up his own mixture of spices and came up with this. It is spectacular on ribs, pork, and chicken.

BBQ Rub

1/4 cup packed brown sugar

1/4 cup sweet paprika

3 TBSP. black pepper

2 TBSP. sea salt

1 TBSP. celery salt

2 tsp. garlic powder

2 tsp. onion powder

1/2 tsp. cayenne pepper

Mix all these spices together in a glass jar. Give it a good shake until its well combined.

Apply this rub to your choice of meat and refrigerate for at least one hour.

This works well with meat that is grilled, baked or pan seared.

Store remaining rub in an airtight jar for up to 6 months.

BBQ Sauce Recipe

My husband came up with this recipe a few years ago, and now when its BBQ season, this is our favorite sauce.

It’s easy, and most households will have these ingredients readily available.

BBQ Sauce

1/2 cube candied ginger-chopped fine

1/4 c. craisins-chopped fine

3/4 c katsup

1/2 c brown sugar

2 TBSP. yellow mustard

1/4 c rice wine vinegar

1/4 c hoisin sauce

1/4 c honey

1/2 tsp. vanilla

1/2 tsp onion powder

1/2 tsp garlic powder

1/4 c maple syrup

1 TBSP soy sauce

2 TBSP molasses

1 TBSP Lawry’s seasoning

Mix all the ingredients together and cook over low heat for about 20 minutes stirring occasionally. Let cool and store in jar in the refrigerator for up to two weeks.
