Easy German Potato Salad

Since we have had our son home he has put in his share of requests as far as dinner goes. One of them was my german potato salad recipe. This pairs very nicely with just about any entree you are serving. Here it is for you all to enjoy.

German Potato Salad

8 red potatoes, cleaned and cut to desired size

1/2 cup diced onion

2 TBSP. olive oil

3/4 cup sugar

2 TBSP. flour

3/4 cup cider vinegar

1/4 cup water

1/4 cup bacon bits

Boil your cleaned and cut potatoes until tender. Drain and let them cool about 15 minutes.

In a sauce pan, heat the oil and saute the onion until tender. Add the sugar and stir in the flour. Slowly add the cider vinegar and the water. Simmer and stir until it is a smooth consistency.

Pour this mixture over your warm potatoes, add the bacon bits and cover and refrigerate at least 3 hours.

Serve hot or cold.

DO NOT PREPARE OR STORE THIS SALAD IN A METAL BOWL OF ANY KIND. GLASS IS PREFERRED.
